PROOF of the PUDDING
Sometimes I find I just have to cook a recipe I have seen, in a book, or from a magazine. Usually it is because of a tempting photograph of the finished dish, or simply the list of ingredients tells me that when put together it will produce a finished dish which will taste wonderful, at least that is the theory. Fortunately for the most part it also the case.
Sometimes I see a recipe I just have to try because I don't believe how it could possibly work or even taste good. Here is one of these recipes which was listed as a salad, but certainly no type of salad with which I am familiar. There are only 4 ingredients, one of which is boiling water!
PEARL LEMON SALAD
1 6oz pkg lemon jello (Jelly for non Americans)
1 lge can pears
1 pkg cream cheese
1 cup boiling water
Put everything in blender and mix until smooth. Pour into mold and place in refrigerator until chilled. Turn out of mold.
Yes it is that simple.
I decided a big part of enjoying food is the appearance, and this seemed to me as if it needed as much help as it could get, so I poured it into my best Williams & Sonoma mold, and waited. It dropped out of the mold beautifully, with the aid of a little dip in hot water. And there it was. It looked fantastic, but the big test was in the flavour. Lemony, yes. Smooth, yes. Delicious, not quite but I do have to say it was much better than anticipated which was good. I can't say I would ever serve it as a salad but I think it would make a good dessert, or a good dish for children. So before you decide something will not taste good maybe it is worth the experimenting. You never know what you might find.

I think the last 'salad' I saw like this was from Paula Deen (?). I am curious why it's termed a salad I must say. Having that pretty shape helped make it look like something in the photo, but as long as it tasted good, that's all that matters:)
